I started my baking career at the age of 15 when I secured my first job as Saturday Boy at Country Style Bakery, in the rural village of Hartley Witney, Hampshire, England. This was a few years ago now!

After the Country Style Bakery I was offered a full-time apprenticeship, which was completed at Jersey Bakery in Aldershot. During the 9 years working at Jersey, I also completed a three year course at Brooklands Technical College.

While at college I developed a special interest in cake decorating and undertook an extra year in Advanced Sugar Work.

In 1983, I won The Renshaw Cup for the best student. Renshaw’s supply the Queens Garden Parties at Buckingham Palace with cakes and petit fours.

After travelling abroad for six years, working in Fort Lauderdale and Cape Cod, Boston USA I followed my heart to Australia.

Initially I worked as Pastry Chef and Cake Decorator at Le Bon Patisserie in North Ryde.

Nowadays, I work from my own kitchen-with-soul, on the beautiful Central Coast of New South Wales.
